2018 Select Late Harvest Vidal

Background
Vidal is a winter-hardy French hybrid that is particularly popular in Canada and the north-eastern United States. The variety ripens late and has thick skins that can withstand the cold winter weather, which makes it ideally suited to late harvest wine production. We harvested and pressed the grapes partially frozen on December 7, 2018 at -7°C. The juice had 30.7 brix and was fermented with specialty yeast strains that are well adapted to high sugar conditions. The resulting sweet wine strikes a nice balance between high sugar and high acidity, allowing the flavours to shine without being cloying.
Tasting Notes
Not as sweet as an Ice Wine but just as big on flavour, this rich dessert wine is bursting with intense apricot, quince, and honey flavours. Produced with an emphasis on acidity and added preservation power in the form of high sugar, our dessert wine is designed to age. As Late Harvest ages the flavours intensify and the colour deepens. Enjoy now, or continue to cellar until 2028.
