Introducing our 2022 Skin Fermented Pinot Gris
How was this orange wine made?
We took Pinot Gris grapes and treated them like red grapes in the cellar. This means, we crushed them and let them ferment - skins, pulp, seeds and all - for 10 days. This process extracts many compounds from the skins including aromas and tannins, deepening the colour of the wine. It was then aged in neutral oak barrels for 18 months, which softened the finish and imparted a creamy texture. The wine was left to mature in the bottle for an additional year for added finesse and complexity. Delightfully dry.
