SKIN FERMENTED RIESLING 2020
Fermented for 15 days on the skins. Dry with mouth-watering acidity, rich aromatics and a fresh and salty finish. Think apple must, wet stone, herbal tea, grapefruit, sour fruit beer.

SKIN FERMENTED PINOT GRIS 2020
Fermented for 12 days on the skins. Dry with a rich mouthfeel, soft tannins and a long finish. Think apricot compote, salted butterscotch, grapefruit, lightly-steeped black tea with the oxidative quality of sherry.

WHAT ARE SKIN FERMENTED WINES?
Also known as skin-contact, orange or amber wines, skin fermented wines are white wines that are made like reds. Meaning: the grape juice + skins are allowed to co-mingle during fermentation which imparts all kinds of bold and interesting flavours, textures and a deeper colour on the wine. Though new to many, skin-fermented whites have been made this way in places like Georgia for thousands of years.

The colour of the wine - ranging from pale yellow to deep orange - depends on the grape variety used and the time the juice ferments with the skins, which can be hours, days or months. It’s not just the colour, but the texture and flavours of skin fermented whites that can be unusual to the uninitiated. Skin fermented whites have more body and tannin, resulting in richer, more robust flavours than conventionally-made whites. They have the acidity of a white wine and the body of a red wine which makes them ideal food pairing partners.
